Lemon Cookies

Lemon Cookies

Ingredients

  • 113 Butter (unsalted)
  • 226 Cream cheese
  • 300 Powdered sugar
  • 2 Lemon zest
  • 1 1/2 Lemon juice
  • 1 Vanilla
  • 1/8 Lemon oil
  • Yellow gel color (optional)
  • 3/4 Salt
  • 1 Egg
  • 1 Egg yolk
  • 270 Flour
  • 2 Baking poweder

Directions

  1. Step 1: In large bowl, cream butter and cream cheese until smooth
  2. Step 2: Slowly add in powdered sugar and mix until fully combined
  3. Step 3: Add lemon zest, lemon juice, vanilla, lemon oil, salt and yellow gel color until well incorporated
  4. Step 4: Add egg and egg yolk. Beat on medium speed until mixture is light and creamy
  5. Step 5: On low speed, mix in flour and baking powder until just combined - do not over mix
  6. Step 6: Cover dough and refrigerate for at least 2 hours or overnight
  7. Step 7: Once chilled, scoop dough into 100g balls
  8. Step 8: Roll each ball in powdered sugar and place on a baking tray
  9. Step 9: Bake at 375F for about 10 minutes, or until the edges are slightly golden
  10. Step 10: Let cookies cool completely, then dust with powdered sugar before serving
